Biryani is one of the most popular dishes within Indian cuisine and a true celebration of Indian culture. It is traditionally cooked and enjoyed during festive or special occasions. Biryani is essentially a one pot dish that is made up of layers of fluffy, saffron infused basmati rice, fried golden onions, and meat marinated in a number of warming spices and herbs.

My biryani recipe is cooked in Dum style, which is a popular cooking method where the biryani is cooked in a sealed pot over low heat, allowing the flavours and aromas of the spices and ingredients to infuse into the rice.

To prepare dum style biryani, the marinated meat is first partially cooked, and then layered with partially cooked rice in a large pot. The pot is then sealed with a tight-fitting lid, and slow cooked over a low heat. This slow cooking method allows the flavours of the spices and ingredients to infuse into the rice, resulting in a delicious, aromatic and flavourful biryani.

My biryani recipe has received a lot of praise over the years, as I’ve cooked this dish for my family, friends as well as professionally to teach other people. From years of cooking and teaching, I’ve realised that while most people love eating a biryani most are actually quite intimidated to attempt cooking a biryani at home. This was my inspiration to create an authentic biryani kit for people to be able to create an ultimate biryani banquet at home. I hope you will enjoy my biryani recipe alongside a cooling raita, fresh kachumber salad, and comforting masala chai.

The word biryani can be traced back to the Persian word 'birinj biriyan' meaning fried rice. The dish can be traced back to Iran where it was slow cooked in a vessel called the deg which allowed the rice to gently fry. It's likely it then came to India with pilgrims and soldier-statesmen and spread across the country to become what we now know as biryani. The dish can be found served in many different variations. Depending on where you are in India you will experience biryani with lots of different spices and flavours.

Basmati Rice

Pure basmati rice grown in the foothills of the Himalayas, naturally aged and gently milled to preserve its quality. The grains are carefully selected to ensure a light, fluffy texture when cooked, with the delicate aroma and subtle flavour that make basmati a staple of Indian cuisine.

Ghee

Made from artisan farm butter, ghee is essential in biryani for building depth and richness. It helps bloom the spices, carrying their aroma through the rice while adding a luxurious, rounded flavour throughout the dish.

Saffron

Saffron is prized for its delicate floral aroma, vibrant golden colour and subtle sweetness. When steeped, its fine threads infuse rice, broths and sauces with rich fragrance and depth, bringing an unmistakable touch of luxury to any dish.
