Heritage of the Dish

Sufaid chicken koftay which translates to white chicken meatballs is a dish that is a favourite of my daughters and definitely for children growing up. A kofta is different from what we think of which is usually one of those middle eastern koftas that are flat or round and sausage like but koftas are different in every culture and in our cuisine a kofta the normally means a meatball. A meatball that is round and can be made from beef, mutton or chicken, sometimes even fish. Now this is a dish that my mother would always have ready to go every time I were coming back from school so it was one of those dishes that really reminds me of my childhood. The flavours in this are so soothing and so delicious. And what I love the most is the fact that it's all very light and white and there is no redness there's no tomatoes and it's really quick dish to make as well. I like to serve this with my turmeric rice because turmeric rice has a gorgeous combination of potatoes that are really nourishing and the turmeric that's really nurturing and it really brings a gorgeous everyday menu onto your table. I hope you enjoy this combination, because I think it's one of those ones that's really steeped in my childhood for me.

Koftay are a much-loved staple in Pakistani cuisine, enjoyed in homes and celebratory meals across the country. Made from spiced minced meat, they are gently shaped into meatballs and simmered in rich, aromatic gravies. Their roots can be traced back to early meatball dishes found across the wider region, later evolving through South Asian cooking traditions. In Pakistan, koftay are cherished for their comforting depth, bold spice and homestyle flavour.

Hero Ingredients

White Poppy Seeds

White poppy seeds are small white seeds that are used as a natural thickening agent in curries. Roasting the seeds also brings out their rich nutty flavours.

Free Range Chicken

Free-range British chicken from award-winning family butcher, slow-grown and reared to high welfare standards for maximum flavour. Naturally tender and full-bodied in taste delivering juicy, richly flavoured meat with a satisfying depth.

Mace

Mace is the delicate, aromatic outer layer of the nutmeg seed, widely used in Pakistani cooking for its warm, slightly sweet and fragrant flavour. When added to dishes, it brings a subtle depth and gentle spice that enhances rich curries and slow-cooked sauces.

Basmati Rice

Pure basmati rice grown in the foothills of the Himalayas, naturally aged and gently milled to preserve its quality. The grains are carefully selected to ensure a light, fluffy texture when cooked, with the delicate aroma and subtle flavour that make basmati a staple of Indian cuisine.
