Lamb Kleftiko is a Greek classic. Let me share with you a story think stolen because this is exactly what Kleftiko means. I invite you to picture the scene. You're a tired shepherd returning to your hut at the end of the day. And are drawn by the flames of the roaring fire, music glass clinking and much merrymaking. Your neighbouring shepherds invite you to sit with them and have dinner. You don't see anything cooking, but you welcome the chance for a glass of their homemade wine anyway and some jokes. Well, it does not take long until the ambers are pushed aside the top is cleared and a beautiful whole lamb emerges. Juicy and succulent that was cooking underneath. That night you go to bed happy and replete and you are happy until the next day when you count your sheep, that is when you find that your prized one is sadly missing. I promise you, the lamb of my Kleftiko is not stolen. At least I think it isn't. As for the flavours, rosemary, garlic and lemon go beautifully with Lamb of course, and with the roasted vegetables that come with it. The dish is finished with the addition of baby gem lettuce drizzled with egg and lemon sauce and suits the richness beautifully. Your kitchen will be filled with the aromas of a Greek Easter feast. No matter what time of the year. And your guests will love cutting open the baking paper parcels to reveal their stolen treasure.

Kleftiko comes from a time of revolution in Greece. Greek rebels hiding in the mountains would steal lambs to keep themselves fed. Kleftiko means 'stolen meat'. The meat would then be wrapped up and cooked in a hole in the ground sealed with soil so that cooking steam and smoke would not give their position away. While this delicious dish comes from more uncertain times it is now often served in Greece as a celebratory meal on Easter Sunday.
