Heritage of the Dish

Listen to Chef Nidhi describe this menu!

00:00 / 00:00

My menus are inspired by the dishes I grew up eating at my grandparents farm in Northern India. We cooked fresh food every day using vegetables picked from the fields and freshly baked bread still warm from the clay ovens. Learn to cook fresh food every day and discover joyful, healthy living.

Xacuti was born during the Portuguese colonisation of Goa. The Portuguese brought many things to Goa including chillies, wine and Christianity. Their own cuisine was also absorbed into Goan cooking. A dish called shakuti brought from Portugal was transformed into Goan Xacuti by being adapted to Indian spices and flavours.

Hero Ingredients

Kashmiri Chilli Whole

Kashmiri chilli is essential for building the deep, rich colour and gentle warmth that defines this dish. Unlike fiery chillies, it brings a mild heat with a subtle smoky sweetness, allowing the complex spice paste to shine without overpowering it. A key spice for authentic balance in Asian cooking.

Free Range Chicken

Free-range British chicken from award-winning family butcher, slow-grown and reared to high welfare standards for maximum flavour. Naturally tender and full-bodied in taste delivering juicy, richly flavoured meat with a satisfying depth.

Fresh Curry Leaves

Fresh curry leaves are a staple ingredient known for its citrusy warm, aromatic flavour used in kitchens across South and Southeast Asia, releasing a distinctive aroma when tempered in hot oil. They bring depth and freshness to sauces, broths, curries and spice blends.

Fresh Coconut

It is a key ingredient in traditional Goan Xacuti, adding natural sweetness, creaminess and depth to the curry. It helps balance the warmth of the spices while creating a rich, rounded sauce with a distinctive coastal flavour.
