2. Smoky Aubergine Stew

For anyone trying Veganuary – this is a menu not to be missed! A vegan version of the classic Malaysian rendang, this is a richly flavoured curry. Think vibrant spices such as lemongrass with creamy coconut milk, jackfruit and roasted sweet potato. Delicious!

Top Tip: Okra is best cooked from room temperature. To make sure it turns out crispy, pat dry before frying to remove extra moisture.

5. Smoky Jackfruit Stew

Jackfruit is a good source of vitamin C, dietary fibre, protein, vitamins A and C. Plus a whole host of other nutrients! It’s a popular staple for anyone looking for a meat alternative.

In other words, this stew is packed with hearty veggies filled with colour and infused with saffron and olive oil.
