Nidhi’s Masala Chai

  • 450 ml water
  • 2 tsp tea leaves or 2 tea bags
  • 1/2 inch of cinnamon stick
  • 4 green cardamom
  • 1 black cardamom
  • 1/2 a star anise
  • 2 cloves
  • 1 tsp fennel seeds
  • 10 g fresh ginger
  • 100-120 ml milk (depending on how strong you like your tea)


  • Bring the water to a boil in a small pan.
  • Gently crush the whole spices and ginger in a pestle mortar.
  • Add the crushed spices to the boiling water and allow to simmer for a few minutes.
  • Then, add the loose tea leaves or tea bags into the water and allow them to brew for a couple of minutes before adding the milk to taste.
  • Bring the pan to a boil again and allow to simmer for 2-5 minutes depending on how strong you like your chai.
  • Remove the pan from the heat, pour the chai (through a sieve if using tea leaves) into a cup and add sugar as to taste.
