Nidhi’s Masala Chai
Do have a go at making this aromatic and highly comforting drink. I’m sure you’ll love it.
- 450 ml water
- 2 tsp tea leaves or 2 tea bags
- 1/2 inch of cinnamon stick
- 4 green cardamom
- 1 black cardamom
- 1/2 a star anise
- 2 cloves
- 1 tsp fennel seeds
- 10 g fresh ginger
- 100-120 ml milk (depending on how strong you like your tea)
Bring the water to a boil in a small pan.
Gently crush the whole spices and ginger in a pestle mortar.
Add the crushed spices to the boiling water and allow to simmer for a few minutes.
Then, add the loose tea leaves or tea bags into the water and allow them to brew for a couple of minutes before adding the milk to taste.
Bring the pan to a boil again and allow to simmer for 2-5 minutes depending on how strong you like your chai.
Remove the pan from the heat, pour the chai (through a sieve if using tea leaves) into a cup and add sugar as to taste.
