Panko breadcrumbs
Panko is a Japanese style of breadcrumbs traditionally used for coating deep-fried foods. It's different to other breadcrumbs in that lightly baked for more crunch and are lighter in texture than normal bread crumbs so don't absorb as much oil. Panko are not only used to coat when frying. they can also be used to thicken soups & sauces, as a binding ingredient or as a topping.

The curry sauce used in katsu curry was a western invention, introduced to Japan by the British. Katsu refers to the fried cutlet in the dish. It was originally beef and a pork version called tonkatsu came later on. Now you can find katsu curry made with almost any type of meat as well as vegetables and tofu. These two elements combined with rice are what makes up Katsu curry as we know it today. The exact origin of the dish is contested in Japan. Both the sauce and cutlet come from a time when westernisation was encouraged in Japan. The combination is said by some to have been created by a professional baseball player who ordered the three elements separately until the restaurant owner noticed and combined them to make a permanent dish. Another theory says the dish comes from Tokyo from a street stall that has been serving a similar dish called 'kawakin-don' since the Taisho period.
