Sherry vinegar
The Spanish translation is "vinagre de jerez" this sweet vinegar is produced in the province of Cadiz in between three towns known as the sherry triangle. Sherry vinegar is produced under a denomination of origin meaning that it can only be produced in the Jerez region of Spain and under a strict aging process. Sherry is aged in the solera system which means that oak casks filled with sherry are piled up in a pyramid style with the oldest casks at the bottom of the pile. The buildings the casks are kept in are often south or southwest facing so that the sherry can take the advantages of a sea breeze. When it comes to bottling, the vinegar is taken from the oldest barrels at the bottom but never more than a third of the barrel is used. It is then topped up with the youngest sherry from the top of the pyramid creating a unique blend of flavours.

'Adobo' comes from the Spanish word 'adobar' meaning to marinate and in Spain usually refers to a vinegar and olive oil marinade flavoured with chilli, herbs and salt & pepper. Marinades like this were invented before refrigerators to help preserve protein for longer. Different versions of adobo can be seen around the world in countries that were colonised by the Spanish empire including Mexico, Puerto Rico and the Philippines.
