Curry Leaves
Curry leaves despite their name have no relation to curry powder. They are native to Indian but are commonly used in other parts of Asia as well. The curry leaf is a glossy, green almond shaped leaf with a complex citrus flavour. They're extremely aromatic and will fill your kitchen with the most wonderful smell. In cooking curry leaves are either used at the very start of a dish to build the flavour profile or at the end as a garnish. They are usually cooked in hot oil, sometimes with other spices to release their distinctive aromas and flavours and the poured over a dish as a finishing touch.
