Bonito Flakes
Also known as katsuobushi, this ingredient is smoked & fermented skipjack tuna. This process can take up to a month to complete and when finished the fish resembles a piece of wood and is less than 20% its original weight. The fish is then shaved into wafer thin pieces which are sold and used to make stocks or as garnish. Bonito flakes bring an intense umami flavour that is common in Japanese cuisine. While evidence of sweet pancakes can be seen in Japan as far back as the 1600's, okonomiyaki first appeared in the 1930's in a shop in Osaka. The dish became especially popular post World War 2 when rice became scarce and money was short. Okonomiyaki filled a gap as an inexpensive but filling dish and its popularity encouraged the invention of kitchen equipment specifically designed to make this dish.
