Mountain oregano

Souvlaki dates back to the Greek Island of Santorini in 2000 BC. There was evidence found of people cooking on skewers or spits from the Bronze age where stone cooking supports were excavated with holes to support the skewers. There is also mention of spit cooking in classic Greek literature. Homer makes reference to pieces of meat roasted on spits in the Iliad. While evidence of the dish can be traced back to the island of Santorini it's evident that this Greek classic became popular throughout the country from early on. Depending on what area of Greece your in souvlaki can come under the following names: kalamaki and souvlaki-merida and while each region has a slight variation on the dish it will always contain some sort of grilled meat, flatbread and fresh vegetables.
