Sherry vinegar
The Spanish translation is "vinagre de jerez" this sweet vinegar is produced in the province of Cadiz in between three towns known as the sherry triangle. Sherry vinegar is produced under a denomination of origin meaning that it can only be produced in the Jerez region of Spain and under a strict aging process. Sherry is aged in the solera system which means that oak casks filled with sherry are piled up in a pyramid style with the oldest casks at the bottom of the pile. The buildings the casks are kept in are often south or southwest facing so that the sherry can take the advantages of a sea breeze. When it comes to bottling, the vinegar is taken from the oldest barrels at the bottom but never more than a third of the barrel is used. It is then topped up with the youngest sherry from the top of the pyramid creating a unique blend of flavours.

Tapa meaning 'lid' in Spanish comes from the verb tapear meaning 'to cover' this supports the theory that this traditionally Spanish way of eating came about when bar keepers used slices of bread, ham or cheese to cover customers drinks and stop flies from getting at them. Popular legend tells a different story and says that tapas were created by King Alfonso X 'The Wise'. After an illness the king was prescribed large quantities of wine. He ate small portions of food alongside his wine to help avoid the side effects of alcohol and made a full recovery. He then insisted that small portions of food should always be served with alcohol to help prevent public drunkenness.

A classic Spanish tapas dish. Prawns sautéed with olive oil, pungent garlic and a kick of chilli.
Traditional padron peppers blistered in a scorching hot pan, served with a creamy homemade alioli that compliments perfectly!
Crispy roasted potatoes drizzled with creamy homemade spicy garlic mayonnaise. It's the perfect traditional accompaniment to your Spanish feast.
This rustic Spanish dish consists of juicy pork, garlicky mushrooms and shavings of nutty manchego. We've turned this traditional meal, typically enjoyed around the family table, into a lighter tapas dish. Allow the aromas of rosemary, paprika and garlic to transport you to a Spanish pueblo.
Romano peppers stuffed with paella rice bursting full of traditional Spanish flavours topped with crunchy toasted nuts and seeds.
An irresistible selection of sharing plates, typically served across tapas bars in Spain. Perfect to be shared and savoured with friends and family.
